chicken satays with peanut sauce
serves 4 persons, easy, prep time ca. 20 minutes

ingredients:

  -         1 kg boneless, skinless chicken breasts, chopped into mouthfilling pieces,
 
         placed on skewers (soaked in water for 15 to 30 minutes)
 
         marinade:
-
         1
teaspoon sesame oil, 1 EL peanut oil
-
         1 clove garlic, minced
-
         2 cm finely grated fresh gingerroot
 
          peanut sauce :
-
         1 EL peanut oil
-
         2/4 cup peanut butter "crunchy"
-
         2/4 cup coconut cream
-
         1 tablespoon lime juice, 1 finely chopped onion, 1/4 cup sweet
 
         soy sauce,
1 tablespoon ground coriander
-         1
teaspoon grated palm sugar (or brown sugar)

preparation:

 char grill the marinated skewers until cooked and serve with peanut sauce. for the peanut sauce:

1. heat oil in a frying pan, sauté onions for 5 minutes, add peanut butter, sweet soy sauce, cilantro, chili sauce and coconut cream, stir, bring to a boil.

2. reduce heat and let it simmer for  5 min., add sugar and lime juice and stir until sugar has dissolved. season to taste.

3. perhaps it is wise to prepare double the amount of sauce...
